Full of grace vegetable soup #healthy #wildrice #organic #vegan #vegetarian #paleo #glutenfree #healthychoices #toddlerapproved #feedfeed #foods4thought #kale #swisschard #protein #f52grams #healthykids #vegetables #wholefoods #lovestylelife #garancedore #esgraceveggiesoup Ingredients: 1. 2 quarts water 2. 3-4 celery stalks, diced 3. 1 yellow onion, diced 4. 2 carrots, diced 5. 3 cloves garlic, minced 6. 8 kale leaves chopped, stems removed 7. 2 Swiss chard leaves chopped, stems removed 8. 1 cup medley of cooked beans and legumes of your choice (I already cooked this in advance and used garbanzo, black, and pinto beans) 9. 2 tomatoes, chopped 10. 1/2 tbsp each: thyme, basil, cumin, garlic powder, and 1 tsp turmeric 11. 1/2 cup diced yam or sweet potato 12. 2 tbsp apple cider vinegar 13. Kosher salt and pepper to taste 14. Grapeseed oil 15. 1-2 cups cooked wild rice Sautée the onions with 1 tsp salt and pinch of pepper in grapeseed oil in a large pot until browned (6 mins). Add in the garlic and sautée for another 2 mins. Add the carrots, celery, and another 1 tsp salt and sautée all together for another 3-4 mins. Add the water, herbs, and the yam or sweet potato and bring to a boil. Add the remaining ingredients and bring the heat to med low. Simmer until all root veggies are cooked through, then add in the cooked wild rice. Season with salt and pepper.
